A Simple and Rapid Method for Quantitative Determination of Amylase Activity in Cereal Seeds
Abstract
KI) after a period of enzymolysis. Using the characteristics of enzyme to substrate specificity, iodine can both terminate the enzymatic reaction and combine with the undecomposed starch to appear blue. Amylase activity can be calculated by colorimetric quantification of the remaining starch. Determination of amylase activity with this method is simple, rapid and accurate.
