Metal Oxide Nanoparticles Stabilising Essential Oil-based Pickering Emulsions for Food Preservation: Potential, Safety and Challenges
Abstract

This paper describes the possible mechanisms of action of metal oxide nanoparticlestabilised essential oil-based Pickering emulsion in food preservation and summarises the forms of action of such emulsions in food preservation, and analyses and summarises the potentials, safety and challenges of metal oxide nanoparticle-stabilised essential oil-based PE in their
application in food preservation.
