Influence of Different Technological Conditions on the Production of Puzzle Wine

Abstract


As one of the four major southern medicines of Hainan, Yidou has the functions of warming spleen, stopping diarrhea and salivation, warming kidney, shrinking urine and strengthening essence. In this study, puzzle fruit was used as raw material to make puzzle liquor
by soaking method. Through single factor experiment and comparison of the quality of puzzle liquor prepared under different technological conditions, the best production technology of puzzle liquor was explored. Results: After analysis, 20g puzzle fruit powder made of
puzzle wine showed better quality in taste and medicinal ingredients content. Nootropics made after soaking for 25 days have a softer taste
and a higher content of medicinal ingredients. Conclusion: The best soaking time of puzzle wine is 25d, and the best raw material amount
of puzzle wine is 20g.
