Study on Identification of Characteristic Efficacy Components, Nutritional Evaluation, and Its Correlation with In Vitro Antioxidant Activity of Noni Fruit Based on Metabolomics

Abstract


This study employed metabolomics methods to analyze Noni fruit using ultra-high performance liquid chromatography-mass spec
trometry (UPLC-MS/MS).A total of 52 differential metabolites were identified, including polyphenols, flavonoids, and terpenoids. Combined
with nutritional component analysis and in vitro antioxidant activity evaluation, it was revealed that phenolic substances such as caffeic acid,
rutin, and quercetin are the key components responsible for the antioxidant activity of Noni fruit. The research results provide a scientific basis
for the development of functional foods from Noni fruit and its quality evaluation.
